Slice all the veggies thin, if you can thinly slice the cucumber, shallots and peppers, Great!
Mix Avocado, cilantro, salt, garlic paste and any other seasoning together.
Take the toast, add avocado to one side and On the other side of the toast, add either of mayo or Hummus.
Layer with tomatoes, cucumbers, shallots and peppers. (Season with salt and pepper between each layering on the veggies)
You can either add the Tofurky slices or not use any mock meat.- be aware that the slices amp up the protein! Top with sprouts!
Feel free to wrap the sandwich in Saran Wrap to keep it tight and not falling apart.
