Ingredients
  

  • 1 cups Red Lentils
  • 1 serving Zoup Veggie Broth Use your preferred fav broth
  • 120 grams Yellow Onions Chopped
  • 30 grams Carrots Chopped

Seasonings

  • 2 tbsp Garlic
  • 1 tbsp Curry Powder
  • 1 tsp Cumin
  • 1 tsp Pink Salt (to taste)
  • 1 tsp Black Pepper
  • 5 grams Olive oil
  • 2 tbsp Lemon Juice
  • 1 tsp Cilantro

Instructions
 

  • In a large pot, add oil and allow to heat up on Medium to High heat.
  • Add onions and sautee until browned, then add carrots and lentils
  • Add cumin, salt, curry and pepper
  • Mix until lentils are getting toasted (about 6 minutes)
  • Add 2-3 cups of vegan broth and cook on med-high
  • Allow lentils to boil and to cook for 15 minutes until soft. (ensure the carrots are soft as well)
  • Take half of your soup and add to blender. Blend until smooth. Add back to pot
  • Mix soup together and determine if you like the texture. You can make it a more loose texture by adding more vegan broth and mixing. You can also make it more smooth by adding broth and reblending mix...
  • once you're happy with the texture, taste test to determine if it needs more salt (very normal for it to be a bit bland after blending)
  • add your garnish of cilantro and lemon juice.
