This is a fast and easy Lentil Soup. It's warm and perfect for fall/winter but can be enjoyed at ANY time.
Split this recipe between 2 days, or share with a couple of people.
In a large pot, add oil and allow to heat up on Medium to High heat.
Add onions and sautee until browned, then add carrots and lentils
Add cumin, salt, curry and pepper
Mix until lentils are getting toasted (about 6 minutes)
Add 2-3 cups of vegan broth and cook on med-high
Allow lentils to boil and to cook for 15 minutes until soft. (ensure the carrots are soft as well)
Take half of your soup and add to blender. Blend until smooth. Add back to pot
Mix soup together and determine if you like the texture. You can make it a more loose texture by adding more vegan broth and mixing. You can also make it more smooth by adding broth and reblending mix...
once you're happy with the texture, taste test to determine if it needs more salt (very normal for it to be a bit bland after blending)
add your garnish of cilantro and lemon juice.
