Ingredients
- 2 slices Bread Toasted. Find a low calorie bread, ideally 60 calories
- 70 grams Tofurky Hickory Smoked "Ham" (Optional) Or preferred protein source
- 14 grams Vegan Mayo or Hummus, or More Avocado
- 60 grams Avocado Smashed
- 10 grams Shallots Or Onions
- 50 grams Cucumber Sliced thin
- 65 grams Tomatoes 4 Slices
- 2 grams Alfalfa Sprouts or Lettuce, Broccoli Sprouts, Arugula
- 5 grams Garlic Paste
- 1 grams Cilantro add as much or little as you want
- 10 grams Serrano pepper or preferred pepper
Instructions
- Slice all the veggies thin, if you can thinly slice the cucumber, shallots and peppers, Great!
- Mix Avocado, cilantro, salt, garlic paste and any other seasoning together.Â
- Take the toast, add avocado to one side and On the other side of the toast, add either of mayo or Hummus.Â
- Layer with tomatoes, cucumbers, shallots and peppers. (Season with salt and pepper between each layering on the veggies)
- You can either add the Tofurky slices or not use any mock meat.- be aware that the slices amp up the protein! Top with sprouts!Â
- Feel free to wrap the sandwich in Saran Wrap to keep it tight and not falling apart.Â
- Have fun with this! If you want to substitute items, go for it! Just measure everything and stay within your macros!Â
