Ingredients
- 1 cups Red Lentils
- 1 serving Zoup Veggie Broth Use your preferred fav broth
- 120 grams Yellow Onions Chopped
- 30 grams Carrots Chopped
Seasonings
- 2 tbsp Garlic
- 1 tbsp Curry Powder
- 1 tsp Cumin
- 1 tsp Pink Salt (to taste)
- 1 tsp Black Pepper
- 5 grams Olive oil
- 2 tbsp Lemon Juice
- 1 tsp Cilantro
Instructions
- In a large pot, add oil and allow to heat up on Medium to High heat.
- Add onions and sautee until browned, then add carrots and lentils
- Add cumin, salt, curry and pepper
- Mix until lentils are getting toasted (about 6 minutes)
- Add 2-3 cups of vegan broth and cook on med-high
- Allow lentils to boil and to cook for 15 minutes until soft. (ensure the carrots are soft as well)
- Take half of your soup and add to blender. Blend until smooth. Add back to pot
- Mix soup together and determine if you like the texture. You can make it a more loose texture by adding more vegan broth and mixing. You can also make it more smooth by adding broth and reblending mix…
- once you’re happy with the texture, taste test to determine if it needs more salt (very normal for it to be a bit bland after blending)
- add your garnish of cilantro and lemon juice.
